    CHEESECAKE PANIC

    OK So....... I lost the recipe for Kats Cheesecake. Its the only cheesecake I really like so I am in the early stages of panic. Dont be alarmed and no one will get hurt. OK...... Recipe......Anyone....... Kat........ Kat....... PLEASE!!!!

    THE BEST CHEESECAKE IN THE WORLD
    CRUST:
    12 Zwieback Toasts - crushed
    1 Teaspoon Cinnamon
    2 Tablespoons Sugar
    5 Tablespoons Melted Butter

    Mix well, and press into a spring form pan

    FILLING:

    3 8-oz Packages of Cream Cheese - softened
    1 Cup Sugar
    1 Teaspoon Vanilla
    3 Eggs

    Beat cream cheese and sugar until well blended add vanilla and
    eggs, and continue mixing until smooth and creamy.

    Pour filling into crust in spring-form pan, and bake in pre-heated oven at
    350 degrees for 30 to 35 minutes.
    Remove from oven, and raise temp to 500:degrees.

    TOPPING:
    3/4 Pint Sour cream
    3 Tablespoons Sugar
    1 1/2 Teaspoons Vanilla

    Mix in small bowl, and gently spread over cheesecake. Bake for 5 minutes in 500 degree oven, Remove and cool. When completely cooled, cover
    with foil, and chill in refrigerator overnight.

    NOTE: DO NOT GREASE SPRING-FORM PAN


    Remember, the smaller the pan, the longer you have to cook it. I'm so glad you enjoyed it curly.

    My mouth is watering now.

    Too bad we don't have cheesecake for tomorrow. I wish we did. I have to settle for pumpkin pie, cherry pie and blueberry pie. I think there is also going to be a coconut custard too. I would trade all of them for some cheesecake though.

    Damn. Now that I dug out the recipe, I'm sending Rick to the store to get the ingredients. I'm making one for tomorrow. Everybody have a great Thanksgiving. And remember, if you try the cheesecake, smear a little on your honey and lick it off. It's delicious that way!!!!

    i have a great recipie too but i also would like to try kat's cheesecake also
    here is mine: easy cheesecake

    2 pkgs cream cheese
    1 small ricotta cheese
    1 1/2 cups sugar
    4 eggs
    3 tbsp flour
    3 tbsp corn starch
    1 tbsp lemon juice
    1 tsp vanilla
    1 stick of butter melted
    1 16oz container sour cream
    i use a stand up electric mixer for this but a hand held one is fine too.
    i keep the mixer running so that the batter stays smooth and creamy.
    grease a 9 or 10 inch spring form pan. Mix cream cheese and butter. add ricotta and
    the other ingredients, putting sour cream in last. bake 1 hour at 350 degrees, after 1 hour shut off the oven and leave the cheesecake in there for 2 or more hours. DO NOT OPEN OVEN DOOR.. Keep the cake in the springform pan until completely cooled then refrigerate it. You may get a small crack in the top of the cheesecake which is normal. Only once did mine not have a crack in it. My cheesecake does not have a crust on the bottom but you can certainly put one if you like.

    Curly, how did your Cheesecake come out? Mine was delicious, and still is. Lubby, I copied your recipe, and I'm trying yours for Christmas. The fact that it doesn't take a crust intrigues me. Hope everyone had a great day, with or without cheesecake.

    Came out great! Thanks again for the recipe. The cake even survived a fall from the car. Whew, that was a close one..... ;D

    My wife also said she's gonna try Lubbys cheesecake. Sounds like another good one...
